Todd's Mashed Cauliflower

Ingredients

  • 1 head of cauliflower
  • ½ onion, chopped
  • 1 leek, chopped
  • 2 cloves garlic, minced
  • Bacon or butter
    • 4 slices bacon
    • 1 tbsp butter
  • Salt and pepper

Directions

  1. Steam cauliflower, then mash.
  2. Add bacon or butter to a pan.
    • If using bacon, cook the bacon until crispy, remove all but 1 tbsp of fat.
  3. Add onions, leek and garlic to the butter and saute until tender.
  4. Add mashed cauliflower and heat through.
  5. Season with salt and pepper.
