Sourdough Okonomiyaki
Okonomiyaki Ingredients
- 1 cup sourdough discard
- 1 egg
- 1 tbsp cornstarch
- ¼ tbsp baking soda
- Pepper
- Soy sauce
- Sesame oil
- 1½ cup shredded cabbage
- Chopped, cooked meat (ham or sausage)
- Chives or green onions
- Other chopped veg
Sauce Ingredients
- 4 tbsp mustard
- 3½ tbsp worcestershire sauce
- 2 tbsp oyster sauce
- ½ tbsp sugar
Directions
- Whisk together discard though oil. Should look like pancake batter, add water or milk if it looks too thick. Add fillings and mix.
- Heat oil in pan over medium, add half or third of the batter and cook until golden. Flip and finish cooking.
- Top with okonomiyaki sauce, mayo, furikake and bonito flakes.
