Sourdough Okonomiyaki

Okonomiyaki Ingredients
  • 1 cup sourdough discard
  • 1 egg
  • 1 tbsp cornstarch
  • ¼ tbsp baking soda
  • Pepper
  • Soy sauce
  • Sesame oil
  • 1½ cup shredded cabbage
  • Chopped, cooked meat (ham or sausage)
  • Chives or green onions
  • Other chopped veg
Sauce Ingredients
  • 4 tbsp mustard
  • 3½ tbsp worcestershire sauce
  • 2 tbsp oyster sauce
  • ½ tbsp sugar
Directions
  1. Whisk together discard though oil. Should look like pancake batter, add water or milk if it looks too thick. Add fillings and mix.
  2. Heat oil in pan over medium, add half or third of the batter and cook until golden. Flip and finish cooking.
  3. Top with okonomiyaki sauce, mayo, furikake and bonito flakes.
